Kid Recipe of the Week:

Easy Chick-n-Cheesy Quesadilla
Makes 2 serving(s
WHAT'S IN IT?
2 (7-inch/fajita-size) wheat or flour tortillas
1/2 cup shredded or cubed cooked chicken breast*
3/4 cup shredded Monterey Jack or Mexican-style cheese
Salsa, fresh cilantro, guacamole, fat-free sour cream (if you like)
STUFF YOU NEED
Lunch-size, microwave-safe plate
Dry measuring cups
Potholders
Pizza cutter
HOW TO PUT IT TOGETHER

  • Place one tortilla on a lunch-size, microwave-safe plate. Top the tortilla evenly with the measured chicken and cheese. Firmly press the remaining tortilla on top. 




  • Microwave on high for 1 1/2 minutes, or until the cheese has melted.




  • Slice like a pizza with a pizza cutter into 6 triangles. 




  • Just pick 'em up and eat 'em as is! Or, if you want a snazzier dinner, serve any or all of the following toppings on the side: salsa, fresh cilantro, guacamole and fat-free sour cream. Olé!
